Perfect End of Summer Salad

Here is one of my favourites – the perfect end of summer salad

I find that we often tend to get baffled about how to make salads, only using lettuce, tomatoes and cucumbers – which can get really boring and send us off hunting in the wrong places for less virtuous foods… In this video I filmed for Get the Gloss, I show you how to be a little more creative with salads by experimenting with a greater array ingredients.

You’ll need:

A handful of rocket leaves
1 ripe, organic pear
1/2 a red onion, peeled
1/2 a cube of feta cheese
An unwaxed lemon
A handful of unsalted,
walnuts

Method:

– Rinse some rocket and place into your bowl
– Peel a pear into your bowl
– Thinly slice half a red onion and sprinkle on top
– Thinly slice the feta cheese over the salad, or chop/rip apart as you wish
– Grate lemon zest over the salad
– Roughly chop walnuts and sprinkle them on your salad
– Season with salt, pepper and olive oil as you wish

And there you have it, a healthy salad that strays from the bland limp lettuce you might usually find in your lunchbox.
