Avocado, Broad Bean & Radish Seed on Toast

Broad Beans

Eat in Season – celebrating July’s seasonal veg.

This is super quick to put together but it is brilliantly filling, colourful and yummy!

  • mashed avocado,
  • peas,
  • broad beans,
  • fresh mint,
  • spring onions &
  • sprinkled with radish seed sprouts
  • Serve on toasted bread (I used toasted Millet bread by Biona which I spread with olive oil),
  • optional: add flakes of poached salmon, crab, chicken or feta.
