Big sigh, it’s the end of another week. I’m re Big sigh, it’s the end of another week. I’m really ready for the weekend and planning to do some cooking, some yoga, a few long walks and some early nights. For lunch today, soup season is still going strong in my house. Today, I’ve made a version of a pho. You can find my full recipe on page 261 of Cook. Nourish. Glow. Otherwise there are heaps online. But here is a rough recipe in case any of you fancy making this for the weekend. I sautéed red onion, garlic, ginger, carrots, fennel, red peppers and kale then added a little tamari sauce, star anise, sesame oil, lemon grass, spring onions and some fresh chilli and lime juice. Then I poured over warm chicken stock and added vermicelli noodles and simmered until warm. Then stirred through coriander. You could add loads more veggies and chicken or fish - there are so many options. There are lots of ideas for things to add in my recipe in #cooknourishglow if you need. NEW RECIPE: SALSA VERDE WITH BUTTERNUT SQUASH SOUP NEW RECIPE: SALSA VERDE WITH BUTTERNUT SQUASH SOUP⁠: I think a really herby salsa verde is perhaps one of the most elevating condiments we can make, turning the simplest soup, steamed fish, chicken, plain pasta, or simple vegetables into a leading lady of a dish. It packs such a flavour punch, balancing aromatic herbs with a welcome cut of vinegar, yet is as simple as anything to make. You simply chop all the ingredients finely together (or whizz them all into a mini food processor) and season to taste. Voila! ⁠
 ⁠
You can vary the herbs you choose according to what is in season, what you have available, or what would work best with your chosen dish. And as well as being deliciously versatile, it’s also a lovely way to get an extra little portion of greens into your meal without having to cook another vegetable side. It also freezes brilliantly (I do this in individual portions in an ice tray) if you have any leftovers that you want to preserve for another day.⁠

Writing, or journalling, has been a tool I’ve of Writing, or journalling, has been a tool I’ve often used to help me get through tricky times.  For years, I have found a quiet evening around the beginning of the year. It’s always been a really lovely process to go through, jotting down how I feel things are going and how I’d like to develop over the coming year. It can also be a helpful way to get lists and worries out of my head and onto paper.⁠ This process is not about strictly holding ourselves to account or setting unrealistic expectations. Instead, it’s about recognising the achievements we’ve made over the past 12 months (which are so easily skimmed over). It’s also about making conscious choices, helping us to build upon what is serving us and to start to release what is not. I don’t have a set way of doing it, but simply find a few blank sheets of paper or a new journal and start writing. I thought some of you might like to try it too.⁠ The process of reflection and then setting mindful intentions, is perhaps even more important now during another lockdown. I wonder if we truly listened to our minds and bodies, we’d find that many (perhaps most) of us are in need of rest, comfort, and gentle rejuvenation right now, rather than any sort of regime, programme or diet.⁠ So, please give yourself all the permission you need to ignore hype, trends or even your own internal voice expecting you to do more. Instead, simply listen kindly to yourself. I think this January more than ever before, we all deserve that. x⠀
