Light yet nutritiously filling, with contrasting flavours and textures, incredibly quick to put together (using mostly store-cupboard ingredients) yet versatile enough to work well with whatever preferred vegetables are in season. I really urge you to give this a go once, because if you’re anything like me, it will instantly become a firm weekly favourite (my 3 year old loves it too!). I am inordinately grateful to one of my favourite food brands of all time @Brindisaspanishfoods for sponsoring the creation of this recipe using the new @perellofoods Alargada white beans. Those of you who have followed me for a while already know how zealous I am about their genuinely superior jarred beans and pulses. Many of us need to try to eat more fibre to reach the NHS recommended target of 30g per day. There are lots of whole food sources of fibre that can help us to achieve this, including vegetables, fruits, wholegrains, pulses, beans, nuts and seeds. ⁠⁠

As always, I am a big advocate of taking small, sustainable steps towards achieving health goals rather than making grandiose about-turns. This can be particularly important when it comes to increasing the amount of fibre we have in our diet (as some people can experience side effects, such as bloating or digestive discomfort if they increase their intake too rapidly). Slow and steady wins the race! ⁠⁠

Therefore, I am delighted to introduce you to a great resource that has been put together by the expert team @RyvitaUK. The FibreFit app helps inspire you to get more fibre into your diet (with lots of recipe ideas, hints & tips), as well as tracking how much fibre you’re getting (with useful barcode scanning or by typing in your favourite foods to get a total for the day). The app also provides a simple way of taking part in their 30in30 challenge, a 30-day challenge that helps to slowly build up the fibre in your diet. I have been using it personally for a couple of weeks now, and really like the tracking feature, which has definitely helped me to focus on maximising my fibre each day. ⁠⁠

I remember watching this rose come into full bloom I remember watching this rose come into full bloom last year, just a few weeks into the first lockdown. And here we are, just weeks away from this blooming again. A full cycle. A whole year of this extraordinary existence. I'm so grateful to have had nature's company along the way. DAYDREAMING. For those of us here in England, we h DAYDREAMING. For those of us here in England, we have a few more weeks to get through before we can start to feel and see some change as we ease out of lockdown. But at least we have a map now. I’m so grateful for that. ⁠⁠

In the meantime, I keep finding myself fantasising about all of the places I’d love to go to when we can travel again. The new adventures, both near and far, that my family and I could enjoy together, away from computer screens, to-do lists and admin. It's a bit of happy escapism and a cheery way to pass the time. ⁠⁠

So, just for a little bit of fun, while I look at pics and dream of all the places we might go, I thought I’d invite you all into my little daydream too. Where would you go if you could? A beach?
