Avocado Papaya / Mango Salsa

This zingy, zesty salsa contains a variety of essential vitamins and antioxidants, as well as fibre to help support our digestion and is delicious served with chicken or white fish, but is just as lovely on its own.

INGREDIENTS
  • 1 ripe papaya or mango
  • 1 firm avocado
  • 1/2 a small red onion
  • 1 red chilli, deseeded
  • 1 large handful of basil
  • 1 large handful of coriander
  • 1 lime, juiced and zested
  • Juice of 1 lemon
  • A good pinch of salt
  • 1 tsp sweetener of choice (honey, coconut sugar etc)
  • Freshly ground black pepper
STEP-BY-STEP

Peel and deseed the papaya / peel the mango and dice into small cubes. Do the same for the avocado. Finely dice the onion and red chili, and put everything into a serving bowl. Finely chop the herbs and add to the bowl, then add the lime zest and mix well.

Squeeze the lime and lemon juice into a jar, then add the salt and honey and mix well. Pour this dressing over the salsa, combine well, season with a good pinch of pepper and serve with white fish and chicken, or simply on its own.
