Chocolate Mousse

Despite being gluten-free & dairy-free, no one needs to know. This is a slightly healthier take on a classic but tastes just as luxurious. It is surprisingly easy to make, with only 5 ingredients and 3 steps – you could have it all to yourself!

INGREDIENTS

To serve:

  • Coconut yoghurt
  • 70% dark chocolate , finely chopped
  • Hazelnuts, chopped
  • Or try orange zest, cocoa nibs
STEP-BY-STEP

Heat the almond milk with cacao butter, cacao powder and dates until the cacao butter has melted and bring it just to boiling.

Place the egg yolks in a small food processor or Nutribullet and pour the boiling mixture onto the yolks and whizz for a minute until creamy, smooth, and cooled a little.

Whisk the egg whites to soft peaks then add one spoonful of the whites to the chocolate mix to loosen it before folding gently into the egg whites. Divide into small glasses, or pretty teacups.

Chill for about 2 hours before serving with a spoonful of coconut yoghurt and a sprinkle of dark chocolate and hazelnuts.
