Champagne ‘Pimms’

PRINT ME SHOW TAGS

A light, summery cocktail and a favourite of mine for those long balmy days in the garden with friends. If you prefer a non-alcoholic version, trying sparkling apple or elderflower presse, both work just as well.

INGREDIENTS

For the filling:

  • Champagne
  • ½ cucumber (smaller the better here)
  • 480ml clear apple juice
  • Half a punnet of raspberries
  • A few sprigs of mint, leaves picked
STEP-BY-STEP

Cut the cucumber into long thin strips and swirl 2 into each glass

Fill each glass halfway with apple juice, then top with champagne

Add a few raspberries and some mint leaves to each.
