Chocolate Orange Porridge
This might seem like an indulgent breakfast but trust me, it is still packed full with nutrients. Cacao is rich in flavanols which may reduce fatigue and support heart health. Good quality dark chocolate is known to contain high levels of antioxidants and minerals but make sure that it has high cocoa content of at least 70%.
If you can’t eat hazelnuts, this is equally tasty topped with a sprinkle of mixed seeds.
INGREDIENTS
- 50g rolled oats
- 300ml hazelnut milk (or milk of your choice)
- 1-2 tsp cacao powder
- Zest ½ orange
- Handful hazelnuts, chopped
- 1 square of dark chocolate, at least 70% cocoa, chopped (optional)
STEP BY STEP
Pour the oats, milk and cacao powder into a pan and bring to the boil, stirring continually. Reduce heat and simmer for 5-6 minutes, stirring regularly until thickened into a creamy porridge. Stir in half of the orange zest.
Serve topped with the remaining zest, hazelnuts and chocolate (if using).
Make 4 wells in the sauce and crack an egg into each one. Cover the pan with a lid and leave to cook for 6-8 minutes or until cooked to your liking. Start checking from around 5 minutes if you prefer a runny yolk.
Scatter with the chopped parsley and serve.
