Yoghurt Marinated Chicken Skewers

These yoghurt-marinated chicken skewers are a very simple supper idea and something I have been making a lot over the last few weeks. Serve with a handful of salad leaves, a few chopped cherry tomatoes and a wholemeal wrap or two, to make a deliciously balanced, summery meal. As well as being a handy fridge staple for breakfasts, desserts and healthy snacks, unsweetened natural yoghurt is also great for cooking with – adding creaminess and tang to savoury dishes. Here I’ve used it as the base for a quick-and-easy marinade, keeping a little of the mixture back for an instant sauce. We can’t get enough of them. I hope you enjoy them too.

INGREDIENTS
  • 250ml Danone Yogurt – Plain Natural Yogurt
  • 1 lemon, zest and juice
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp salt & ½ tsp pepper
  • 1 tsp dried parsley
  • 2 chicken breasts, diced
STEP BY STEP

Whisk together the yoghurt, lemon, olive oil, garlic, seasoning and dried parsley in a large bowl. Reserve a third of this mixture into a separate bowl, to serve with the skewers later on.

Add the diced chicken to the remaining two thirds of the marinade, mix well, and leave in the fridge for at least 2 hours, ideally overnight.

When ready to cook, thread the marinated chicken onto skewers and cook on a griddle or BBQ, or under a hot grill, for 6-7 minutes, or until cooked through, turning halfway.
