There can be little more rewarding than sitting around a table with friends and family enjoying a hearty meal cooked up together. If you are feeding a crowd, you’ll find lots of comforting stews, casseroles and tray bakes – see my Chicken & Squash Tray Bake. Batch cooking is something I urge everyone to engage with – it saves oodles of time, money and, best of all, it guarantees a wholesome plate of food at busy times (with minimal washing up!). You’ll find a host of inspiration here for main lunch and supper dishes, including lots of vegan and Meat Free Monday ideas. Do remember the benefits of eating seasonal produce;  nature is our best cue for ensuring that we are fuelling our bodies with the nutrients we need.
