It’s so easy to partner warmer weather with salads but, like soup, they offer brilliant scope for taking advantage of foods in season. A winter salad fragrant with warming herbs and spices is a real treat – a rainbow of veg and fruit such as red cabbage, chicory, artichokes, roasted winter squashes, clementine, pear – are such a joy to the eyes as well as the taste buds. Add nuts and seeds for extra oomph and top with a portion of protein like poached chicken, salmon, goats cheese or lentils and you have a nourishing complete meal. Remember, if you’re roasting veg for Sunday lunch or cooking up a mid-week supper, do a little extra and save for a salad later in the week.
