Spiced Roasted Nuts
These are a lovely and quick snack to serve with a glass of ice-cold fizz. A roaring fire and great company go well with them, too. They would also make a sweet present, perhaps packed into a small kilner jar, wrapped up with a festive ribbon.
INGREDIENTS
For the filling:
- 100g cashews*
- 100g whole almonds*
- 100g pumpkin seeds*
- 100g pecans*
- 3 tbsp olive oil
- 1 tbsp honey
- 1 tsp salt
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp orange zest
*or substitute all the above nuts for 400g mixed nuts
STEP-BY-STEP
Preheat the oven to 160°C.
Mix all the ingredients together in a bowl until the nuts and seeds are well coated.
Scatter the nuts onto a large, lined baking sheet.
Roast for 7 minutes (set a timer!) and then mix, before roasting for a further 7 minutes.
Remove, add a good grind of black pepper and allow to cool completely before storing in an air-tight container.
