NEW RECIPE: SALSA VERDE WITH BUTTERNUT SQUASH SOUP NEW RECIPE: SALSA VERDE WITH BUTTERNUT SQUASH SOUP: I think a really herby salsa verde is perhaps one of the most elevating condiments we can make, turning the simplest soup, steamed fish, chicken, plain pasta, or simple vegetables into a leading lady of a dish. It packs such a flavour punch, balancing aromatic herbs with a welcome cut of vinegar, yet is as simple as anything to make. You simply chop all the ingredients finely together (or whizz them all into a mini food processor) and season to taste. Voila!

You can vary the herbs you choose according to what is in season, what you have available, or what would work best with your chosen dish. And as well as being deliciously versatile, it’s also a lovely way to get an extra little portion of greens into your meal without having to cook another vegetable side. It also freezes brilliantly (I do this in individual portions in an ice tray) if you have any leftovers that you want to preserve for another day.

Please see the link in my bio for the full version of this recipe, as well as the delicious butternut squash soup I have served it with here. Many thanks to @aspallvinegar, a company I have been a genuine fan of for many years, who have kindly collaborated with me to create a little collection of seasonal recipes to share with you all. More of these to come very soon! x

Writing, or journalling, has been a tool I’ve of Writing, or journalling, has been a tool I’ve often used to help me get through tricky times. For years, I have found a quiet evening around the beginning of the year. It’s always been a really lovely process to go through, jotting down how I feel things are going and how I’d like to develop over the coming year. It can also be a helpful way to get lists and worries out of my head and onto paper. This process is not about strictly holding ourselves to account or setting unrealistic expectations. Instead, it’s about recognising the achievements we’ve made over the past 12 months (which are so easily skimmed over). It’s also about making conscious choices, helping us to build upon what is serving us and to start to release what is not. I don’t have a set way of doing it, but simply find a few blank sheets of paper or a new journal and start writing. I thought some of you might like to try it too. The process of reflection and then setting mindful intentions, is perhaps even more important now during another lockdown. I wonder if we truly listened to our minds and bodies, we’d find that many (perhaps most) of us are in need of rest, comfort, and gentle rejuvenation right now, rather than any sort of regime, programme or diet. So, please give yourself all the permission you need to ignore hype, trends or even your own internal voice expecting you to do more. Instead, simply listen kindly to yourself. I think this January more than ever before, we all deserve that. x⠀

AD A NOURISHING VEGANUARY: If you are participatin AD A NOURISHING VEGANUARY: If you are participating in #Veganuary this year, I hope these tips are helpful.⠀
 ⠀
1. Protein: Is essential for growth and repair in our bodies. Options include pulses, lentils, beans, hummus, nuts, seeds, tempeh, tofu and peas. Aim for one portion at each meal and vary them as much as possible. Whole Foods Market stock delicious fresh and pre-made options such as curried tempeh, dahl and smoky black bean chilli.⠀
⠀
2. Omega-3 fats: Essential fats - we need to get them from food as our body cannot make them. They can be found in the form of ALA from various nuts and seeds (esp. walnuts, soaked chia seeds, hazelnuts and pecans) and rapeseed oil. A drizzle of olive oil, a sprinkle of nuts or seeds or a good quality, low sugar granola or chia pudding are good options.⠀
⠀
3. Whole foods: Being vegan doesn't necessarily guarantee a balanced diet overall. It's great to eat more plants but try (where possible) to focus on eating mostly whole and minimally processed foods. Fruits, vegetables, pulses, nuts & seeds, wholegrains and healthy oils are examples.⠀
⠀
4. Vitamin D: In the UK, we are unable to make Vitamin D from the sun in January. The Department of Health recommends that all adults consider supplementing with vitamin D over the winter months (Oct-Mar). Vegan vitamin D supplements are available. Some mushrooms are UV-treated before being sold so are a potentially useful source of plant-based vitamin D.⠀
⠀
5. Ingredients: When looking for meat and dairy replacements, read ingredients carefully as not all of them are necessarily healthy or vegan. It's very easy to eat a highly processed and refined, sugar-heavy plant-based diet. Where possible, go for the most natural products. ⠀
⠀
@wholefoodsuk are world leaders in natural and organic foods which all meet rigorous Quality Standards and offer a fantastic selection of high-quality plant-based options and some exciting brands doing innovative things for vegan diets, many of which are exclusive this January and available across the seven London stores.
